Vineyard: South Eastern Vineyard
Arriving from a single vineyard in Upperton, West Sussex that produces the best Bacchus we have found in the UK.
This site has just 4 rows of Bacchus surrounded by grapes destined for traditional method sparkling wine.
This vineyard is one of best managed we have worked with, 20-year-old vines in their prime, very precise canopy management, which resulted in grapes with wonderful aromatics and balance.

Vinification
Once in the cellar these grapes were hand sorted, whole bunch pressed, and fermented in stainless steel tanks. 3 different yeast cultures were used to ferment this wine at different temperatures – each with a specific role in the final blend.
Malolactic fermentation was partially completed to naturally soften the crisp palate and build body.
