An elegant and delicate, single vintage, traditional method sparkling wine. Salmon pink colour in the glass full of lots of tiny bubbles. Floral and red apple aromas lead to red apple and cranberry on the palate with a bright, fresh finish and lovely length. IOC 18-2007 was the dominant yeast strain used. 2018 was a great year and we decided to let the vineyard characteristics come through by keeping the yeast selection neutral. As 2018 was such a ripe year it was not necessary to put all batches through MLF. The final blend reached a poised but demure total acidity
