Vinification
Carefully picked Pinot Noir grapes were pressed and cold settled for 48 hours prior to racking. The juice underwent a long and slow fermentation in stainless tanks using aromatic yeasts.
This wine did not go through malolactic fermentation but spent time on yeast lees to build palate weight, before bottling in spring 2023.
