
Description
Vibrant and tense. The nose is deep with both ripe red cherries and dried sour cherries, red apple, poached rhubarb and rose petal. This richness is balanced against a palate with the lactic creaminess of strawberry yoghurt and the freshness and subtle bitterness of pink grapefruit.

Vineyard
Just 15 minutes from Dorchester, the Crawthorne Vineyard is located on a sheltered south-facing slope 90 metres above sea level in the Dorset AONB. The soil consists of a shallow clay loam, containing flint, over deep Cretaceous chalk.
Vinification
The grapes for the base vintage were picked in October 2019 and gently pressed, whole bunch. Press fractions were carefully separated and left to naturally settle for 24 hours. Primary fermentation took place in a combination of stainless-steel tanks & used oak barrels, followed by complete malolactic fermentation.
Maturation
Following 8-9 months of élevage, the final blend was created including 7% red wine and 18% reserve wine. It was then bottled and left to age on lees for a minimum of 20 months. At disgorgement the wine received 2 g/L dosage and was aged for a minimum of 4 months under cork.
