
Description
100% Chardonnay, predominately from the 2019 vintage and aged on the lees for two years, this is an energetic, concentrated Blanc de Blancs. On the nose, a tense balance between ripe green apple and conference pear, white flowers and intense graphite minerality. The palate is delicate yet weighty in texture, with soft ripe pear, honeydew melon and white grapefruit acidity, finishing with a trademark saline nuttiness.

Vineyard
Just 15 minutes from Dorchester, the Crawthorne Vineyard is located on a sheltered south-facing slope 90 metres above sea level in the Dorset AONB. The soil consists of a shallow clay loam, containing flint, over deep Cretaceous chalk.
Vinification
Our winemaking is oxidative, with minimal intervention. Our grapes are gently pressed in whole bunches. Press fractions are carefully separated and left to naturally settle for 24 hours. Primary fermentation takes place with indigenous yeast in a combination of stainless-steel tanks & used oak barrels, followed by complete malolactic fermentation.
Maturation
Following 8-9 months of élevage, the final blend is bottled and left to age on lees for a minimum of 24 months. At disgorgement the wine received 1.5 g/L dosage and was aged for a minimum of 6 months under cork.
